VITICULTURE
Organic farming, hot and dry Mediterranean climate, granitic soil, manual viticulture and mechanical tillage.
HARVEST
August 29 and 6 October 2017. Hand picking in 10 kg crates.
ViGNIFICATION
Plot vignification. Grapes sorted and destemmed. Vignification by gravity, extraction by daily pigeage, maceration of 3 to 5 weeks, aging of 12 months in stainless steel vats (1/3), in wooden vats (1/3) and in French oak barrels of 500L (1/3). Assembly at the end of aging, stabilization by cold, light filtration before bottling.

TASTING NOTES
Color: Beautiful deep garnet brilliant color with purple hints.
Nose: Fresh and intense, on fresh red fruits such as cherry, raspberry, spicy and slightly vanilla notes, complex and intense nose.
Palate: Clear and franc, a lot of complexity, both on fruits and spices: blackberry, cherry, liquorice, vanilla, while keeping a lot of freshness. The tannins are soft and well melted. The end of the mouth is gourmet and long. A wine marked by the delicacy, elegance and expression of our granitic terroir.

With grilled meats or game in sauce.
