VITICULTURE

Organic farming, hot and dry Mediterranean climate, granitic soil, manual viticulture and mechanical tillage.

HARVEST

September 13th to October 5th of 2017. Cluster selection of “Adrien” lot. Hand harvest on 10 kg trays.

VINIFICATION

Vinification by lot by lot. Cluster selection and then destemmed, conducted to the tank by gravity, extraction by daily pisage, alcoholic fermentation under controlled temperature (20 – 22°C) and maceration during 6 weeks. Aging in 300 and 500 litres French oak barrels for 24 months, blend at the end of the ageing period. Cold stabilization and gently filtered before bottling.

TASTING NOTES

Colour: Brillant and intense garnet red with purple hints.
Nose: Rich and intense, with ripe black fruit notes, complex, mineral, a touch of sweet spices, cacao, vanilla and brioche.
Palate: Structured and complex, intense, fresh and with a nice acidity, delicate and elegant. Black fruits such as prune, together with violet and cinnamon. Soft and well-integrated tannins ; tasty mouth fill, with an iodized touch and a large end.

Meet stew, beef and grilled pork.

14-16°C, decantation recommended if possible.
