70% Syrah – 30% Tempranillo
Organic farming, hot and dry Mediterranean climates, granitic soil, manual viticulture and mechanical tillage.
September 16 and 17, 2020.
Manual picking in 10 kg crates.
Plot vinification. Grapes sorted and destemmed. Gravity vatting, extraction by daily pigeage, short maceration of 3 weeks. Aging of 5 months in stainless steel tanks. Assembly at the end of aging, stabilization by cold. No collage or filtration before bottling.
« Natural » wine. No added sulphites.
Dress: Beautiful deep garnet shiny dress with purple hints.
Nose: Fresh and intense, on the fruit: blackcurrant, redcurrant, cherry with spicy notes. Very gourmet.
Palate: Clean and franc, energetic with a lot of freshness, gourmet and salivating wine, crunchy, very fruity reminiscent of wood fruits jam: plum, cherry, blackcurrant, redcurrant, with young soft tannins already melted.
Food and wine pairing
As an aperitif and with grilled meats: ribs, chicken breats, sausages.
13-14°C, decanting not necessary.
